Coming 2026: New King Soopers store

A new King Soopers store began construction in Denver last week.

The grocer is building a 103,000-square-foot store at 4201 E. Arkansas Ave., along Colorado Boulevard and north of Interstate 25.

It’s currently scheduled to open by spring 2026.

The new store will replace the company’s Belcaro location on 825 S. Colorado Blvd., as King Soopers said in a news release that it outgrew the store and relocating would be a “meaningful step toward better serving the growing demand in the area.”

“We’re excited to bring a larger, more accommodating space to better serve our Belcaro neighbors and the Denver community, where customers will find the wide selection, value, and seamless service they’ve come to expect from us,” said Chris Albi, King Soopers’ group vice president of operations, in a statement.

The store will include a pharmacy, Murray’s Cheese Shop, Starbucks and a sushi department. King Soopers also operates a fuel center across the street.

King Soopers, which is owned by Kroger, expects to hire 200 people for the new store.

Large mixed-use development with Target store coming to Denver

A new neighborhood with shopping and housing is set to be built near Denver International Airport.

Developers Kensington Development Partners and IM Properties announced it acquired 150 acres in Denver and plans to create a mixed-use district called Link 56 that will include a Target store and 2,000 rental units.

Link 56 will be located in the Green Valley Ranch and DIA market, on the northwest side of 56th Avenue and Tower Road, and the first phase of construction is expected to cost $235 million to develop.

The district will have more than 250,000-square-feet of commercial real estate as well as 27 acres of park and open space, according to the developers. It will have direct access to the Peña Station light rail stop and the Rocky Mountain Arsenal Wildlife Preserve.

The first phase will include the construction of a 150,000-square-foot Target store, several retail buildings for coffee shops and restaurants, 13 apartment buildings with 214 units and 170 rental townhomes. Work will begin “immediately,” the developers said.

The area around DIA is home to about 43,000 employees from major companies like Coca-Cola, PepsiCo, Microsoft, Amazon, United Airlines, and soon, a major Zyn factory.

“Link 56 represents an incredible opportunity to bring a vibrant, well-balanced community to one of Denver’s fastest-growing corridors,” said Jared Eck, development partner of Kensington Development Partners, in a media release. “With high-quality retail, exceptional housing options, and unparalleled connectivity, this project is a perfect example of our commitment to delivering impactful developments that enhance communities and create long-term value.”

Los Dos Potrillos makes its Denver debut

The family-owned Mexican restaurant Los Dos Potrillos is expanding into Denver.

The restaurant will open at 4100 E Mexico Ave., along Colorado Boulevard and Interstate 25, on Tuesday.

Los Dos Potrillos was founded in Centennial in 2002 by the Ramirez family, who operate under the Ramirez Hospitality Group. It’s their first Los Dos Potrillos restaurant in Denver.

“We’ve always wanted to bring Los Dos Potrillos to Denver, and we couldn’t be more excited to share our food and family traditions while building an incredible new community at Colorado Boulevard,” said Daniel Ramirez, CEO of Los Dos Potrillos, in a news release. “Everything we serve comes from the heart, and we can’t wait to welcome our Denver neighbors into the family.”

The restaurant will be 8,000-square-feet and will employ 100 people, according to the owners. It will also feature Mexican craft beer from Los Dos Potrillos’ in-house brewery, as well as their popular margaritas.

The restaurant also has five other locations including Highlands Ranch, Littleton, Parker, Castle Rock and their home city of Centennial.
