Sandoitchi pop-up returns to Denver, bringing its viral Japanese sandos
No need to book a flight for those trendy convenience store sandwiches – but they won’t be in town for long
Inspired by the sweet and savory ‘Sandos’ found at konbini convenience stores across Japan, Sandoitchi makes a return to Denver with its elevated sandwich pop-up in RiNo.
‘Sandos,’ short for sandowitchi, are fluffy, crustless, minimalist sandwiches made from Japanese milk bread. The milk bread is the secret to the sandos with its signature soft and feathery texture created using a tangzhong technique – a method of cooking the base flour and liquid into a roux before adding to the dough.
Sandoitchi got its roots in Dallas in 2020 as an experimental pop-up during the height of the Japanese ‘Sando’ craze during the pandemic.
Stevie Nguyen, the chef behind the ‘Sandos,’ brings experience from top restaurants Morimoto and Momofuku Ko in New York, along with business partners Keith Tran, Andy Sirois, and Angel Acosta to deliver an elevated sandowitchi experience.
“Denver is one of our favorite markets because it is a really dynamic food city with a ton of exciting things going on,” Tran said. “We haven’t been here since 2024 and we are thrilled to be back.”
The pop-up ‘Sando’ shop will be open from 10 a.m. to 4 p.m. from now through Saturday, March 7, at The Source Hotel.

The menu includes popular flavors like the Strawberry Cream Sando, Egg Salad Sando and a Classic Chicken Katsu Sando. This year they are offering new flavors to try like their Wagyu Burger Katsu Sando, a Curry Ebi Shrimp Katsu Sando, as well as an “Elote” Corn Karaage and a Japanese Potato Croquette.
Along with ‘Sandos’, they are also serving drinks with Japanese-inspired flavors like matcha, as well as new trending drinks like a Yuzu Arnold Palmer and a Manjo Ube Lassi drink.
