New “rooftop escape” in Denver comes with vibrant eats and colorful cocktails
Denver’s newest rooftop bar and restaurant is officially open for business as of October 30.
Dubbed Cimera, this restaurant is found atop The Source Hotel in RiNo, aiming to deliver “an elevated Pan-Latin dining experience” with internationally acclaimed Peruvian chef Diego Muñoz at the helm. The cuisine at Cimera is designed to be representative of a blend of Mexican, Central American, and South American dishes and flavors.

Described as a “rooftop escape,” Cimera offers both indoor and open-air patio dining, with art and its urban design catering to the overall experience. Expect a menu of shareable street foods, sushi, “fire-kissed mains,” and “artful cocktails.”

“Cimera celebrates culture, craft, and connection—bright flavors, Denver rooftop vibes, Latin soul,” reads the company website.

A few of the restaurant’s dishes include tuna tiradito, octopus carpaccio, pork belly anticucho, ribeye, salmon adobado, and papa rellena – all of which feature creative twists (explore the menu here).
The cocktails fit the spot’s vibrant vibe, too, with specialty options that are colorful and refreshing.

It’s also worth noting that Denver local Geoff Cox is the executive chef of Cimera, with Cox recognized in the past by James Beard and Michelin for his work at Hop Alley.
Cimera joins several other highly-rated dining establishments at The Source Hotel, including Safta, Temaki Den, and Reunion Bread Company.
